Ingredients:
1.Chinthakayalu 3
2.Brinjal 1/4 kilo
3.Onion chopped 2
4.Green chilli paste 1 tbsp
5.Ginger garlic paste 1 tbsp
6.Jaggery grated 1 tbsp
7.Cumin and Fenugreek powder a pinch
8.Tempering seeds 1 tbsp
9.Curry leaves
10.Coriander leaves
11.Turmeric powder a pinch
12.Saindava lavanam(Rock salt) to taste
13.Gingle oil 3 tbsp
Preparation:
1.Take a mud pan pour some Gingle oil and heat it,add onions fry till to golden brown add brinjal peces to the mud pan and cook till tender.
2.Remove from the mud pan and keep aside,In the same mud pan add some Gingle oil and heat it.
3.Add tempering seeds,turmeric powder, ginger pieces, curry leaves , garlicpieces, and saute for a minute.
4.Meanwhile take tamarind pulp,add green chilli paste, cumin and fenugreek powder,fried brinjals ,jaggeryand mix well.
5.Finally pour the tempering mixture and give it a mix.
6.Transfer into a bowl and garnish with coriander leaves.
