Cholay
Biryani
Ingredients:
1.Chick
peas soaked 1 cup
2.Basmati
soaked 1 1/2 cup
3.Salt to
taste
4.Green
cardamoms 6
5.Bay
leaves 2
6.Cloves 2
7.Tea
leaves 2 tbsp
8.Ghee 3
tbsp
9.Onion
slices 1 medium
10.Garlic
paste 1 tbsp
11.Ginger
paste 1 tbsp
12.Cholay
masala 2 tbsp
13.Red chilli
powder 1 tbsp
14.Potatoes
peeled and boiled
15.safron
16.Skimmed
milk 1/4 cup
17.Curd 1/2
cup
18.Fried
onions 1/2 cup
19.Mint
leaves torn 1/2 cup
20.Ginger
cut into strips 1 inch piece
Preparation:
1.Take a
pan cook 1 1/2 cups soaked basmati rice in 4 cups water with salt,green
cardamoms,bay leaves,cloves and ditch excess water after cooking.
2.On other
side pressure cook chick peas 1 cup with salt,tea leaves tied in a muslin
cloth.
3.Heat 2
tbsp ghee in a non stick pan deep pan,add onion sliced and fry golden brown
4.Add 1
tbsp garlic paste,ginger paste,green chilli paste and continue to fry for few
minutes.
5.Add
cholay masala,red chilli powder and mix well.Now add chick peas boiled and give
it a mix.
6.Take
another pan add 1 tbsp oil and heat it,add boiled and peeled potatoes and fry
till golden brown.

Meanwhile add some saffron strands in milk and cook for a minute in oven.
8 .Add salt
to cholay, potatoes and mix well.Spread half the rice on cholay,drizzle 1/2 cup
curd,fried onions,mint leaves and ginger tiles. Spread the remaining rice.
9.Finally
add saffron strands cooked in milk,fried onions,pudina leaves.Cover and cook
for few minutes on low down flame. serve up hot
