Mamidikaya Masala Rice
Ingredients:
1.Raw Mangoes
2.Cooked Rice
3.Red chillies
4.Coriander seeds
5.Cumin seeds
6.Dry coconut
7.Tempering seeds
8.Peanuts
9.Hing
10.Curry leaves
11.Coriander leaves
12.Salt
13.Turmeric powder
14.Oil
15.Cashew nuts
Preparation:
1.Dry roast cumin seeds,coriander seeds,red chillies and fry till fragrant.
2. Blend into a fine powder along with dry coconut and put aside.
3.Heat some oil in a pot, add hing,peanuts tempering seeds,curry leaves,red chillies, and fry for few minutes.
4.Add roasted masala powder to the frying pot and mix well.
5.Mix grated mango,salt,tempering mixture with rice and mix well equally. serve up with garnish cashew nuts and coriander leaves.
