Dumstick and Plantain Biryanir
Ingredients:
1.Drumsticks
2.Plantain
3.Poppy seeds
4.Cardamom
5.Cloves
6.Cinnamon
7.Coconut slices
8.Dried red chillies
9.Onions
10.Mint leaves
12.Salt
13.Oil
14.Ginger garlic paste
15.Star anise
16.Mace
17.Bay leaf
18.Coriander seeds
19.Green chillies
20.Coriander leaves
21.Yogurt
22.Tomatoes
23.Lemon juice
24.Ghee
Preparation:
1.dried out roast all ingredient(Poppy seeds,Cardamom,Cloves,Cinnamon,Coconut
pieces,Dried red chillies, Mace, Bay leaf, Coriander seeds) on low light up
till aromatic.Blend into powder.
2.Heat some oil,fry plantains till vaguely brown colour and
keep to the left. Now add in onions,and saute till onions are brown in colour.
3.Add drumsticks,ginger garlic pieces,green chillies,mint
leaves,coriander leaves and fried plantains.
4.Add turmeric powder yogurt, tomato slices and blend masala
to the red-hot pot. Add in some water,cover and cook till plantains are gentle
and spongy.
5. heat some water on large bowl by adding oil,salt.in the
meantime soak basmati rice for 30 minutes.
6.Add rice to boiling water and cook till 70- 80%done.Now
add 80% done rice to frying pan by form a layer.Sprinkle some coriander leaves
and sprinkle some ghee on top of the rice.
7.Cover and steam till 10-12 minutes and switch off the
flame and rest for few minutes.
8. Fluff the rice with wooden spatula gently and Serve
hot with raita .
