Mixed Veg Lemon Rice
Ingredients:
1.Lemon juice 4 tbsp
2.Rice 1 cup
3.Potato 1
4.Brinjal 2
5.Fresh coconut
6.Green peas 1/2 cup
7.Peanuts 1 tbsp
8.Green chillies 4
9. Oil 3tsp
.Curry leaves
11.Coriander leaves
12.Tempering seeds 1 tbsp
13.Turmeric powder 2 tbsp
14.Salt to taste
Preparation:
1.Take a pot pour some oil and heat it,add tempering seeds, peanuts turmeric curry leaves fry for a minute.
2.Add green chillies potatoes,green peas, brinjal add salt and fry for few minutes.
3.Cover and cook for few minutes till brinjal pieces are tenmder.
4.Add,coconut paste to the pot and saute well.
5.Fry for a minute, add cooked rice mix well,
6.Switch off the flame and add lemon juice and mix well. relocate into a bowl and decorate by coriander. serve up hot.
