Beet Root Pulav

Ingredients:

1.Beetroot  1 cup
2.Basmati rice 1 cup
3.Potatoes 1 cup
4.Carrot 1/4 cup
5.Beans chopped 1/4 cup
36.Pudina leaves
7.Onion chopped 1
8.Jajikaya 1 small piece
9.Cashew nuts 20 grams
10.Green chillies 2
11.Roasted Whole garam masala
12.Salt to taste
13.Marathi mogga
14.Ghee 3 tbsp

Preparation:

13.Take a pan pour some ghee and melt it,add cashew nuts and fry for few minutes.
2.In the same pan ,add onions and saute for few minutes till light Golden brown.
3. Add vegetables to the frying pan and fry, add Roasted whole garam masala, pudina and fry for few minutes.
4.Add 2 cups of  water to the frying pan and add salt, cover and cook for 5 minutes.
5.Add soaking rice and mix well, cover and cook for  few minutes .After  completed transfer the rice into another bowl and add beetroot grated, Friedcashew nuts to the pan and spread into a layer.
6.Cover it with rice and cook for another 5 minutes by covering completly.Transfer into a dish and serve warm.
