Palak Pongal
Ingredients:
1.Spinach shredded 1 cup
2.Rice 1 cup
3.Moong dal 1/2 cup
4.Green chillies 3
5.Onion chopped 1
6.Oil1tsp
7.Ginger chopped 1 tbsp
8.Cashew nuts
9.Pepper powder 1 tbsp
10.Cumin seeds 1/2 tbsp
11.Curry leaves
12.Dried red chillies 2
13.Coconut milk 1 cup
14.Ghee 2 tbsp
15.Salt to taste
Preparation:
1.Heat some ghee,oil in a pot add pepper,cumin seeds,dried red chillies,onions and saute for few minutes.
2.Add ginger, now add spinach and fry till tender.
3.Add soaked moong dal,rice to the frying pot and fry for few minutes.
4.Add coconut sufficient water,salt and bring it to boil.Cover and cook till complete.
5.Transfer into a glass bowl and decorate with fried cashews serve up hot.
