Achari Chaana Pulao
Ingredients:
1.Rice1/4kg
2.Fennel seeds
3.jeera
4.Kalonji
5.Bay leaf
6.cumin
7.coriender
8.Garam masala powder
9.Ghee
10.Salt to taste
11.Green chillies
12.Hing
13.Turmeric powder
14.Ginger garlic paste
15.Kabuli chana
16.Curd
17.Coriander powder
18.Red chilli powder
19.Pudina
Preparation:
1.Heat some ghee in a pan,add jeera,fennel seeds,bay
leaf,kalonji,cumin seeds,fenugreek seeds and saute.
2.Add crudely grinded garam masala , and saute for few
minutes.
3.Add salt,green chillies,hing,turmeric powder,ginger garlic
paste and mix well.Cook till raw flavor is all gone.Add soaked kabuli chana and
saute.
4.Meanwhile prepare a slurry,take a bowl combine curd along
with some red chilli powder,mustard powder,coriander powder, and mix well
evenly all the ingredients.
5.Now add this mixture to frying pan and mix well.cook till
all masala coat well the chana.
6.Now add soaked rice and spread it,add 2 cups of water.Add
coriander,pudina leaves.Cover and cook on slow flame till all mositure is
absorbed by rice.
7.Once done,gently flip the rice upside down and serve hot.
